The lemon balm comes from southern Europe. Because it has so many healing effects, it has long been grown in Central European gardens. In the Middle Ages it even had to be grown in every monastery garden by regulation because it was already considered very valuable and indispensable back then. The delicate lemon scent of lemon balm is like a balm for the soul. As in grandmother's times, we also harvest the lemon balm from our own cultivation, only when the sun is shining around midday (most of the essential oils are in the leaves) and processed immediately. The herbal mixture can stay in the warm sun, here in southern Burgenland, for at least 8 weeks or longer in order to release all the rich active ingredients into the elixir. We only use untreated herbs from our own cultivation, which are selected and processed entirely by hand. We do not use any sprays or chemical fertilizers!
