What is Black Garlic?

Black garlic is not a special type of garlic. It is refined from fresh garlic.

Refined since 2010, we at the Goldenits organic farm are Austria's first producers of this high-quality food.

To produce our "Schwoazn Knofl" from Seewinkel, we use a special method for targeted aging and preservation, more precisely a special fermentation process and only use organic garlic from our own cultivation. During the complex refinement process, the garlic also takes on its deep black color, the consistency becomes jelly-like and the taste shifts to a sweetish taste reminiscent of balsamic vinegar.

What makes black garlic so extraordinary?

The health-promoting properties of raw garlic are well known, but also its less popular side effects such as the typical bad breath and sometimes stomach irritation.

When consuming black garlic, however, these are not to be feared and make this healthy food an ideal daily addition, raw or in other dishes.

How can I use black garlic in the kitchen?

There are no limits to your creativity in the kitchen: 

Fresh black garlic can be easily spread on bread and other dishes, pureed to refine sauces and oils for various dressings, or lightly dried and cut into thin slices to garnish your favorite dish.

Black garlic is ideal for braising. However, caution should be exercised when frying as, like fresh white garlic, it becomes slightly bitter at temperatures above 200°C. So put it in the pan at the end and only fry it briefly.
