The Brenner family strives to produce displaced grain varieties. Einkorn disappeared as a crop after the high-yield hard and soft wheat became established. The einkorn thrives until ripe on the Waldviertler granite, which is covered with rock-fired earth and a layer of humus. In addition to the valuable ingredients, it is also impressive in terms of cuisine. Einkorn is suitable for cooking and grinding.
