Waldstaudekorn is a very old type of rye and is grown directly on our farm. After harvesting, the grain is lightly sanded so that it can swell more easily during cooking. Rice can be used as a side dish for many different dishes. It is cooked in double the amount of water with a little salt for about 25 minutes, then left to steep a little more if necessary.

Description

It's hard to imagine Biohof Brenner without Waldstaudekorn. Since January 2014, the area around the organic farm has been an organic Waldstaudekorn gourmet region. A slight grinding gives the ancient grain better cooking properties. Many other dishes can also be conjured up with this rice.
