Description

Malt is a storage-proof grain that is germinated under controlled conditions and then dried again. When producing the malt extract, the malt is crushed after drying and boiled with water. The filtered liquid - the so-called “wort” - is then heated and gently evaporated. The resulting malt extract is a natural product with a long tradition and is very valued in all bakeries. The effect on the dough properties, aroma and volume of baked goods has been used for over 100 years. In particular, the degradation processes promoted by malt have a significant influence on the taste, freshness and crispness of bread and pastries. The special thing about malt extract: In addition to the characteristic flavors, it contains a number of different types of sugar (especially maltose, dextrins, glucose, etc.), which affect the consistency of the dough, the volume of the pastry, the crumb structure and the browning of the crust. The characteristic and popular malt and caramel flavor develops during the baking process.
