Description
The secret of the mild fruitiness lies, on the one hand, in the pear cider from which the pear vinegar is made. Huge, gnarled cider pear trees characterize the landscape of the Mostviertel. Many of them are over 200 years old. The slightly tart pears make heavenly sweet juice. This is fermented into pear cider and then further refined into pear vinegar under controlled conditions. For the balsamic vinegar, sweet, thickened pear juice is then added and it is stored in a wooden barrel for another 2 years.
