Instruction manual / Tip Spaetzle with wholemeal spelled flour 375 (500) g flour Salt ¼ (3/8) lt. water 3 (4) eggs for cooking: Plenty of salted water; for tossing: butter For 4 people, 375 g of flour is enough as a side dish; For the main course you need 500 g of flour Cheese spaetzle (with spaetzle dough made from 500 g flour) 200-300 g coarsely grated hard cheese (or leftover cheese) 2 onions, cut into rings Preparation: Whisk eggs in the food processor, add water and salt, also whisk and slowly add flour while stirring constantly. A soft, chewy dough is created. Grate this in portions through a spaetzle slicer into boiling salted water, making sure to leave a few centimeters of distance from the cooking water. Bring the spaetzle to the boil quickly in an open pot a few times until they float to the surface; Cooking for too long makes spaetzle sticky. Remove the cooked spaetzle with a slotted spoon, pour hot water over it, drain very well, if necessary. Spread out on a board covered with a cotton cloth and let dry. Spaetzle can be made several hours before use or the day before. Cheese spaetzle: Grease the baking dish, pour in the spaetzle to a depth of approx. 2 cm, season with salt and pepper and sprinkle grated cheese over it. Add layers of spaetzle, salt, pepper and grated cheese on top. The final layer of cheese. Bake in the oven at 200 °C for approx. 15 minutes.
