Description
According to Hildegard von Bingen, spelled is the best grain. She lived in the 12th century and was a Benedictine nun and poet. She is particularly known as an important scholar of her time. Due to the increasing intolerance of wheat, the demand for spelled is increasing today. The two are related, although spelled has long been overshadowed by wheat. As a result, it was less bred and to this day contains less gluten.
